One day I had a crazy idea.  Why not go out and get a food truck and make people happy on a daily basis?  This of course happened in the midst of our recession a little over a year ago.  I'm not new to the business of pleasing people, I've been in the restaurant business as a bus boy, waiter, bar back, you name it since I looked old enough to work (don't tell but I've been working since I was 13).  After many trips to Denver, CO to try and get my hands on a well built truck and striking out each time I came upon a beauty online that just seemed too good to be true.  Luckily after many a discussion and a huge problem on the sellers side (this in itself is a story worth mentioning.  Maybe later) I ended up with a fine peace of machinery that needed a lot of TLC in early 2010.  After a year of working hard on renovating we were finally prepped to open our doors to the public.  But wait, you say, what about the cooking, am I a chef, where did I get my chops?  Well, like I mentioned earlier I've been in the business since I was a kid, but my true love for food comes from deeper within.  I remember fondly in my childhood years my father would absolutely love to grill out.  It didn't matter what the weather was like or whether we had meat to grill or not, he wanted to be outside with the family and friends having a good time with good food.  Heck, sometimes, err, most times we didn't have much of a grill to speak of but he made it happen one way or another.  There were times we didn't have much more than tortillas and beans to grill (yes, you can grill beans, just don't forget the pot) but it didn't matter, what mattered is that he loved it and I loved how it made me feel.  Fast forward many years and that same love was instilled into me.  I also think it has much to do with the fact that on most ocassions once grown I would end up on the business side of a grill at a party or get together since most times the guys grilling thoughts of grilled food meant a heavy dose of lighter fluid and black charr all over the food was a good thing. 
No, I'm not a chef, I've learned to grill, smoke, cook just like most other folks do, by trial and error and mostly error but somehow my ingredients and style works and hopefully you all agree.  I genuinely love food and what it does to people when they eat something that truly dances on their taste buds.  The joy it creates at least for the next minute or so before it's all gone. 



Our food is a little different in the sense that we are trying to create recipes that are true to the original versions of Mexican street food but giving them a twist.  The same goes for the BBQ style we use.  Every ingredient we use is of the highest quality and we pride ourselves in that.  We understand we won't make as much profit due to this but we believe the quality of a product comes through and you can taste it. 

Right now we are trying to juggle going out on the weekends and my having a ful time job.  We all know we are in a turbulent time right now and nothing is set in stone so as a father of three and somewhat responsible husband I cannot take the chance of doing this full time just yet.  If all goes well of course, you might see us on a daily basis around town.  We understand it to be difficult for some folks to come out and see us during the weekend but we do promise you one thing.  You will enjoy yourself at the very least try something that quite possibly you never have before.
If you check the first logo in grey, that was the very first draft made by our friend Linda Santana, an artist that is currently in Texas studying.  Remember her name, she's going to make waves in the future.  She actually worked on our logo for a little over a year since due to unexpected outcomes the logo had been completed with my two oldest boys but soon after "completion" we had to add a third boy in the middle, my youngest Fabian.  Below is the final final product.
